For any of you who have been on my “no eggs” journey, I can happily report that I am back on my egg grind! It only took weeks of hospital tests, scans, and frustrating video calls to discover my lingering health issues were not related to eggs at all. We honestly don’t know what caused it. And while I wish I could have discovered the root cause, I will rejoice in the fact that eggs are back!
So in honor of eggs returning to my morning routine, I am sharing my favorite breakfast to make… shakshuka! Traditionally, it is a Middle Eastern dish of poached eggs in a spicy tomato sauce. For me, it’s a savory red sauce packed with hidden vegetables and perfect to dip with crusty bread.

As I reflect on the fact that I am sharing two marinara-based dishes back to back, it makes me wonder why I really do not like pasta with any kind of red sauce. Isn’t it all the same? I think I only like red sauce paired with vegetables and cheese. No pasta needed. Weird, I know, but I guess we all have weird food preferences right?!
Anyway, enjoy this one! I’ve been making it for YEARS. Truly years. It’s my go-to morning dish when I feel in a rut. But be warned… poached eggs are hard to pull off. I almost always overcook them so air on the side of undercooking them and letting them set into the sauce.

INGREDIENTS
1 jar marinara sauce of choice (been loving Sauz Hot Honey Marinara)
1 bell pepper
1 yellow onion
1 zucchini
4 eggs
1 cup goat cheese
fresh parsley
Italian seasoning
salt & pepper
olive oil
Serving Size: 2-3
INSTRUCTIONS
- To prepare, chop bell pepper, onion, and zucchini.
- In a large skillet, heat a dash of olive oil.
- Add chopped vegetables into the skillet and cook for 4-5 minutes until the onion becomes translucent and the vegetables cook through.
- Season with salt, pepper, and italian seasoning.
- Pour the marinara sauce over the vegetables and combine, heating up until the sauce begins to bubble.
- Lower the heat and use a large spoon to make small holes in the sauce. One at a time, crack an egg directly into the 4 indented spots.
- Sprinkle goat cheese and fresh parsley on top.
- Cover with a lid and cook for 3-4 minutes until the egg yolk turns white.
- Immediately remove from the heat and serve. *Be careful, you can very quickly overcook the eggs.
- Enjoy with toast!
