Crispy Baked Brussel Sprouts

Well I can report that a 5 ½ hour road trip with two kids under 18 months is do-able! And an act of pure willpower. Nick and I ventured up the coast this weekend to celebrate a family engagement – an event we knew we didn’t want to miss – so we packed up the hilariously loaded car for two days in Carmel and hoped for the best as we sped along highway 5. 

Why do you need this context for a crispy brussel sprouts recipe? Just because! 

But in actuality it’s because we love to travel. But when we do, obviously the weekend routine of Nick *bonding* with Maya (they essentially take a nap together ha) while I grocery shop with Koa, goes out the window. And Monday feels like a trueeee Monday. Chores, work, settling back into a schedule. It’s worth it every single time, but I also find myself highly unmotivated to do a lot. That goes for meal planning for the week as well. 

When in doubt, I go back to the basics. The recipes I used to make but haven’t in awhile. This is one of those recipes. I have distinct memories of making this dish thousands of times while living in our old one bedroom apartment in Santa Monica. It’s one pan, easy to throw together (especially if you buy the pre-shaved brussel sprouts at TJs), and delicious. Even if you are less than enthused about brussels, I think you may like them this way! They aren’t glazed but they are crispy and tangy. Anyway, sharing here as I gear up to go to the grocery store with my 3 month old. Decidedly not as fun as it is with my 18 month old who likes to eat an entire apple as we shop.

INGREDIENTS

1 lb. brussel sprouts

3 shallots

4-5 cloves garlic

1 lemon

olive oil 

salt & pepper

Serving Size: 4

INSTRUCTIONS

  • Preheat oven to 400F.
  • Shave the brussel sprouts if you don’t purchase pre-shaved (can be found at TJs). 
  • Slice the shallots and finely mince the garlic.
  • Toss brussel sprouts, shallots, and garlic with lemon juice, olive oil, salt & pepper. 
  • Bake for 20 mins. 
  • Then immediately broil on high for 3-4 minutes. 
  • Enjoy!
