Baked Spinach & Feta Potatoes

Looking for a fun side to your holiday meals? Look no further than these baked potatoes. I love a good baked potato dish as a side when you hit that time of year when your meals need to feed more bellies than you are used to cooking for. I never know how much rice to make for a crowd or how many rolls to warm, but baked potato dishes… easy peasy. You can make a large amount of feed quickly and efficiently. And if you accidentally make too much, they are perfect for repurposing for breakfast the next morning. Toss a fried egg on top, whip up some bacon or sausage, and voila… two meals for the price of the one!

And as we all know, I am obsessed with feta dishes. It’s just so versatile. And as a cheese lover myself, I can’t help but add it to all my dishes. It helps that it is one of the few cheeses that does not upset my lactose-intolerant (but actively in denial) husband’s stomach. So I’ll take any cheese I can get that doesn’t ruin the rest of the evening ha!

This one is inspired by Carina Wolf at goodmoodfood, a fellow NYU alum here in the LA-area. Her dishes are wild combinations of fresh fruits, grains, and dressings. Usually in the form of a bowl or salad of some sort. And this one was too good to pass up. I have made it a few times and simplified due to my lack of time to chop fresh herbs… or green thumb to grow them myself. But if you have dill or oregano fresh, try using that instead!

INGREDIENTS

1 lb. golden potatoes

1 large bag spinach

1 white onion

1 block feta cheese

6 cloves garlic

Olive oil

Seasonings: dill, oregano, salt & pepper

Serving Size: 4

INSTRUCTIONS

  • Preheat the oven to 400F. 
  • Cut the potatoes in half. Then in a large baking dish, toss the potatoes with olive oil and seasonings. 
  • Add feta to the center of the baking dish with the potatoes around it.
  • Bake for 45 minutes until soft.
  • While the potatoes are baking, chop the onion and garlic and saute in a pan with another dash of olive oil until translucent and fragrant. 
  • Gently stir in spinach in batches then remove from heat and set aside until the potatoes are finished. 
  • Remove potatoes from the oven and combine the onions/spinach with the potatoes/feta, gently stirring until combined. 
  • Enjoy!
