As I continue to pretend I am on official spring break here in Maui, I am leaning into the fresh ingredients I can find on the island and pretending summer is almost here. Though it is decidedly not anywhere near summer back on the mainland. I’ll keep it simple this week with a light, fresh, and simple salsa that I like to keep on hand while here. It is the perfect snack after a morning on the beach or a long neighborhood walk on the island.
But do not be discouraged if you are not by a warm beach today, this salsa is also great to whip out for a spring BBQ. Did you know mango season in the US officially starts in May? We are so close guys!
Whip this one out for an eye-pleasing dip or side for your next gathering in hopes that this long winter is soon coming to a close!

INGREDIENTS
2 avocados
2 mangoes
½ red onion
½ bunch cilantro
2 limes
Salt and pepper
Serving Size: 2-4

INSTRUCTIONS
- Finely dice red onion, avocado, and mango into bite-sized chunks and roughly chop cilantro.
- Gently toss with juice of 2 limes, salt and pepper.
- Enjoy!
