Chocolate Chip Oatmeal Clusters

Some of you may remember that in December I accidentally bought half a dozen cans of condensed milk in my late pregnancy haze. And let’s be honest, how often does anyone use condensed milk? It’s one of those ingredients that you don’t actually keep stocked in the cabinet because you don’t need it on a random weekday. You may not even need it more than once a year! So what was a girl to do with this many cans of condensed milk? 

I could keep making my family’s holiday magic bars but that would defeat the purpose of having a special family treat for the holidays. But alas, I did have a surplus of ALL the same ingredients – coconut, chocolate chips, condensed milk. So when Half Baked Harvest posted a cookie version I was astounded. What a great idea! Honestly which I could claim it as my own. And if you know me, you know I don’t like to bake. Well I like to bake but am not good at it. Her recipe was so simple, so fool proof, how could I NOT make them?

So I made them, then I fell in love with them. So just as simple as the recipe, I will keep the post simple as well. If you are like me and have random neglected cans of condensed milk in the cabinet that need use, give these a try! 

A note for my fellow breastfeeding mamas, I added a few tablespoons of Brewer’s Yeast that helps support milk supply. It’s flavorless and doesn’t change the consistency at all. I also added a tablespoon of flax seeds because why not! I didn’t add it into the official recipe for those looking to keep it straight forward. But if are like me and like to sneak in anything “good for you” under the guise of delicious dessert-y goodness, then give it a whirl. 

INGREDIENTS

1 can condensed milk (14 oz)

1.5 cups unsweetened shredded coconut

1 cup oats

2 cups chocolate chips

Dash of maldon salt

Serving Size: 12

INSTRUCTIONS

  • Preheat the oven to 350F and line a baking sheet with parchment paper.
  • Mix all the ingredients together. 
  • Scoop a large spoonful into a loose lump on the baking sheet. 
  • Bake for 15 minutes. 
  • Enjoy!
