Sometimes I digress into long updates on my thoughts in these posts, other times I get right down to it.
Today is one of the posts, nothing too fancy, just a tried and true holiday cookie recipe to add to the growing list! Isn’t funny how I post one sweet recipe for every 10 savory… until December. Then it’s sugar sugar sugar.
This is mostly because I don’t keep sweets in the house that I have no control over. A bag of candy? I can easily skip. Gluten-ous cookies? Have at ‘em Nick! Ice cream and popsicles? Well depending on the flavor, those can be debatable, but usually I can refrain. But homemade cookies… I have no self control. Honestly. So these recipes only come out once a year. And I love them for it.


This is one of those. I am not usually a chocolate-only kind of fan but for these I make an exception! My mom found the recipe for this in some magazine years ago and cut out the recipe old school style, keeping it in her accordion recipe file for occasions like these. They are super simple to make and what I like about them is they FEEL festive given the dusting of powdered sugar. They look cute and are sweet, but not too sweet. And let me tell you about the texture… they are chewy, gooey, and stay that way for days. A little crunch on the outside and a perfectly smooth inside. My dad claims they definitely don’t taste gluten free… which I take as the ultimate compliment from him!
Save this one for the next time you are feeling chocolate-forward! And it does not have to be Christmas specific.


INGREDIENTS
1 cup GF baking flour
1 tsp. baking powder
1 tsp. fine salt
¼ cup oil
1 cup semi-sweet or bittersweet chocolate chips
1 cup sugar
2 tsp. vanilla extract
2 eggs
½ cup powdered sugar
Serving Size: 12
INSTRUCTIONS
- Mix together dry ingredients: flour, baking powder, and salt. Set aside.
- Melt chocolate chips.
- Whisk oil, ½ cup of sugar, vanilla extra, and eggs into the melted chocolate.
- Gently stir the flour mixture into the chocolate mixture.
- Cover and refrigerate for at least 2 hours.
- Preheat oven to 350F and line a baking sheet with parchment paper.
- Add ½ cup sugar in a bowl and ½ cup of powdered sugar in a second bowl.
- Roll the dough into 1-inch balls.
- Roll in the sugar then the powdered sugar.
- Bake for 10 minutes.
- Let cool and enjoy!
