I’m sitting here today less than motivated to do my usual routine – work, personal to dos, cooking. Let’s be honest. Some days we wake up ready to take on the world, romanticizing our routines. Other days, it feels like walking through quick sand. And sometimes the last thing we want to do on a weeknight is make dinner. I’ve said it once before and I will say it a million times more, when days like this happen, I come prepared with a crockpot recipe. A recipe like this one that uses mostly things you’d have laying around the kitchen pantry anyways.
For how simple and light it is, the soup is surprisingly addicting. Nick and I always end up reverting back to this recipe when we are less than inspired and/or craving a clean diet. This is great for the week after a vacation when you are just getting back into the swing of things and want a healthy reset. It’s great for a day when you are too busy to even think of cooking. It’s great for summer, fall, winter, spring – it’s just that versatile. And simple!


This light and healthy chicken and lime soup is grain-free, dairy-free, salty, savory, and heart-warming all at once. You can throw almost any leftover veggies in as well and the lime will mask the flavor (for those adverse to vegetables). But this is my tried and true crockpot recipe that never fails me when I am in a bit of a rut. Enjoy!

INGREDIENTS
1 lb. chicken breast
1 can white beans
2 cups chopped celery
1 medium yellow onion
½ cup chopped cilantro
4-6 cups chicken broth
1 can hatch green chilis
6 limes
1 tsp. cumin
salt & pepper
Serving Size: 6-8
INSTRUCTIONS
- Clean and cut chicken breast into large chunks, place in the crockpot.
- Chop celery, onion, and cilantro, place in the crockpot with the chicken.
- Add cumin, salt and pepper then beans and green chilis.
- Juice 6 limes into crockpot.
- Top up with chicken broth. Depending on your crockpot size this could be anywhere from 4-6 cups of broth. Just add to the top.
- Cook on LOW for 6-8 hours (I like to start it before going to work in the morning and letting it sit until dinner time, you can’t over cook this) or HIGH for 4 hours.
- Before eating, remove the chicken and use a knife to shred the chicken (should be soft and not hard to do at this point).
- Add shredded chicken back to the crockpot.
- Top with a bit more cilantro and red chili pepper flakes, ENJOY!
