CK’s Perfect Guacamole

Fun fact: Nick and I met while working in a small bar & grill at our local tennis club. Nick spent many a summers working at the tennis club, moving his way through the kids camp to the kitchen. Funny how he never cooks anymore… I have vivid memories of walking in in the mornings to Nick whipping up copious amounts of bacon on the griddle. Side note – it’s a dream to have one of those large griddle ovens in my home kitchen one day! 

Now Nick toils away on the computer while I do all the cooking! But back in the day, I was only allowed to make two things in the kitchen: milkshakes and guacamole. I made large batches of homemade guacamole daily. I reveled in it. Probably because it was the only real cooking I was allowed to do but alas… I became a PRO. 

Now I know you may be thinking guacamole can’t be that hard to make. And honestly… it isn’t. But perfecting the right avocado to additional ingredients ratio can make all the difference. And the secret sauce to this one is two things – a dap of hot sauce and a bit of your favorite pre-made salsa. I like to use salsa verde since it keeps the mixture as green as possible, but you can honestly use any type of salsa. 

I hesitate to share this recipe with you because then I won’t be the only one with the secret sauce but for you guys, I will. Not much more needs to be said here so take a look and keep this one handy. It’s useful for any and all occasions.

INGREDIENTS

3-4 ripe avocados

2 roma tomatoes

⅓ red onion

½ bunch cilantro (*Can omit if you are a cilantro hater)

1 jalapeno

2 limes

¼ cup favorite salsa

1 tsp. hot sauce

garlic powder, salt & pepper to taste

Serving Size: 4 

* These measurements are approximate based on how large your avocados are.

INSTRUCTIONS

  • Peel and de-core the avocados. Using a fork, mash avocados together until desired chunkiness level (I like smooth with a few small clumps).
  • Finely dice tomatoes, red onion, cilantro, and jalapeno.
  • Gently mix into mashed avocado.
  • Juice fresh limes and add to your mix with the hot sauce and salsa. 
  • Add a dash of garlic powder, then salt and pepper to taste. Enjoy!
