Crispy Feta

Well, it’s been a busy March so far. I don’t know how it’s already the 21st or how I got here… Actually, I do. Life. Life happens. Day job duties get busy. Some intermittent travel. Nick and I have actively been saying YES to as much as possible. But admittedly, I am tired. I am craving the slow weekend days reading my book and drinking a Juneshine on Venice Beach. So as I actively try to slow down and get back to my prioritizing the slower things in life, I’ll share a downright bonafide hit in our house.

If you haven’t been introduced to crispy cheese yet… let me introduce you to crispy feta! You’re welcome.

It’s hard to go wrong with anything cheese related but this recipe is beyond drool-worthy and the perfect topping to many dishes. It’s my secret weapon for smaller groups or family dinners if I can keep it hot and plate right away!

I’ve made this multiple times with different cheese and feta is the best by far. The density of feta in brine makes it easier to handle than softer cheeses like goat and the saltiness from the feta brine amplifies the addicting flavor of the crispy crust.

You can make them into small bites to spruce up a Mediterranean salad, you can toss them in antipasto, or you can make them all by themselves to dip into your favorite tomato sauce. Guilty pleasure! Seriously, give it a try. I swear you won’t be able to resist.

INGREDIENTS

8 oz. Feta in Brine

½ cup Potato Starch or Arrowroot Flour

1 egg

1 tbsp. Avocado Oil

Serving Size: 4

INSTRUCTIONS

  • Remove Feta from brine and pat dry.
  • Slice into ½ thick strips and set aside.
  • Whisk one egg in a bowl and layer breadcrumbs in another bowl.
  • One at a time, dip the feta strip into the egg wash then roll in the flour.
  • Heat avocado oil in a skillet.
  • Gently place feta on the skillet. Cook for 1-2 minutes until the bottom side is golden brown. Then gently flip over and cook on the other side for another 1-2 minutes.
  • Place on a paper towel to drain extra oil while you finish the rest of the feta.
  • Cut into bite sizes or leave as strips.
  • Enjoy!
