I make a lot of ground meatballs. Mostly for the reasons above.
They are great snacks and great additions to dinner meals. With only a few ingredients you can easily switch them up with different seasonings.
The main takeaway here is to not overcrowd the pan when pan frying! Or if you feel like an even healthier version, you can bake them at 400F for 20 minutes… But honestly, pan fry them, the crispy outside is like no other.
INGREDIENTS
1 lb. ground chicken
2 eggs
⅓ cup almond flour
½ cup shredded parmesan
2 tbsp. fresh parsley and dill
1 tsp. garlic powder
Red pepper flakes, salt & pepper
Serving Size: 2
INSTRUCTIONS
- Combine all the ingredients in a bowl.
- Roll into small patties and place on parchment paper-lined baking sheet.
- Pan fry on medium/high heat in avocado oil in a large skillet. (Don’t overcrowd the pan!) *Typically 4-5 minutes a side.
- Enjoy!
