After three months on the beautiful island of Maui [during covid], I am on a rum kick. As one of the most underrated alcohols (in my opinion), its sweet tones are perfect for cocktails. So let me introduce you to the best homemade Mint Mojito. This recipe is so easy to make large quantities of so put it on the list for your next happy hour, family gathering, party, or a sunny Sunday afternoon.

What makes this recipe unique? Homemade Mojito Simple Syrup.
Yup, simmer sugar, water, mint, and limes to make your own Mojito flavored syrup to amp up the flavor. The best part – you can choose how much simple syrup you use in your drink based on how sweet you like your cocktail. I only use a dash of the simple syrup because I like my drinks tangy and refreshing.
Top with sparkling water (my favorite cocktail ingredient if you haven’t noticed) and you have yourself a fancy looking cocktail that is surprisingly easy to make!


INGREDIENTS
2 oz. White Rum
1 Lime
Handful of Fresh Mint
1 tbsp. Mojito Simple Syrup (see below)
Sparkling Water
Ice Cubes
For the Mojito Simple Syrup —
½ cup Granulated Sugar
½ cup Water
2 Limes
10 Fresh Mint Leaves
Serving Size: 1 (simply syrup is enough for 8)
INSTRUCTIONS
For the simple syrup –
- In a small bowl, bring sugar, water, mint leaves, and limes (sliced into wedges) to a simmer. Cover with a lid.
- Simmer (covered) for 10 minutes.
- Remove from heat and let cool.
- Strain liquid to keep the syrup and discard the cooked limes and mint leaves.
Assembly –
- Place a few mint leaves and two limes wedges into an empty glass.
- Using a mortar or heavy spoon, muddle the mint and limes.
- Add mojito simple syrup and rum. Quickly stir together.
- Fill the rest of the glass with ice.
- Pour sparkling water over it all.
- Stir and serve!
