*REPOST FROM OLD BLOG

Inspired by the one and only rachlmansfield.com this dessert is surprisingly addicting. I mean, how can you have anything bad to say about a dessert that has dark chocolate, milk chocolate, AND white chocolate. And the best part for me — it doesn’t require actual baking. We all know baking is hard for me. Cooking = easy, no recipe needed. Baking = oh my goodness, I can’t follow a recipe for the life of me.
With minimal ingredients, minimal steps, and no baking required, this recipe would be a staple in my house if not for the fact that Nick doesn’t have self control when it comes to sweet snacks. Therefore, this is reserved for special occasions.

INGREDIENTS
2 cups Gluten Free Rice Cereal
3 tbsp. Raw Honey
3 tbsp. Coconut Oil (liquid)
½ cup Creamy Peanut Butter
½ cup Dark Chocolate Chips
½ cups Milk Chocolate Chips
½ cup White Chocolate Chips
1 tsp. Sea Salt
Serving Size: 8
INSTRUCTIONS
- Line a casserole dish with parchment paper.
- In a large bowl, mix together the honey, coconut oil, peanut butter and cereal.
- Pour mixture into the casserole dish.
- Melt the dark chocolate in microwave for 30 seconds. Stir and microwave for another 30 seconds. Stir vigorously to complete melt as to not burn the chocolate.
- Drizzle the dark chocolate all over the cereal mixture.
- Repeat the same steps with the milk chocolate and the white chocolate chips.
- Set in the refrigerator for 30 minutes to set.
- Remove from the fridge and cut into individual pieces.
- Keep stored in the fridge as to not melt the chocolate for up to a week.
- Enjoy!!
