


One of my fan favorites (and when I say fan, I mean my lovely family and friends) is Yoshii’s Caesar Salad with Cracker Crusted Chicken Tenders.
Now I know I haven’t divulged Yoshii’s epic Caesar dressing yet on this updated blog site but I PROMISE I will soon. In the meantime, I’ll share my secret weapon crispy chicken nuggets.
And you don’t have to eat these tenders with salad.
You can enjoy them all on your own with ketchup and ranch or oven-baked fries. Hello childhood! But with so much more flavor.
Now that live sports are in full swing and there is always a game on TV to watch, I thought I’d share the simple chicken tender recipe so we can all enjoy these guilty pleasures at home… with less guilt!
When out at bars (pre-turning 30 hahah), chicken tenders were my number one most desired food, and obviously a top contender for things I cannot eat being gluten free.
I’ve tried many recipes from all different food bloggers, chefs, authors, THIS is by far the crispiest, most “normal” tasting, mouth-savoring recipe you will ever try. Though I hate “norma” tasting. These are epic regardless of whether you are GF or not.

INGREDIENTS
2-4 Chicken Breast
2 cups Crackers of choice (I used Simple Mills but any cracker works)
1 tbsp. Italian Seasoning
1 tbsp. Arrowroot starch (or potato starch)
1 Egg
Salt & Pepper
2 tbsp. Cooking oil (I use avocado oil due to its high heat capabilities)
Serving Size: 2-4
INSTRUCTIONS
- In a food processor, crush crackers. *If you don’t have a food processor, use a Ziploc bag, pour in crackers, close tightly, and crush with the back of a large spoon.
- Mix arrowroot starch, Italian seasoning, and salt & pepper with the crushed crackers. Layer onto a shallow plate and set aside.
- Whisk one egg and set aside.
- Clean and cut chicken breast into nugget-size chunks.
- In a service line, dip chicken breast into the egg wash then coat with the cracker mix.
- Heat oil in a large skillet until super hot. Place chicken tenders on the skillet and cook 4-5 mins each side until coating is browned and chicken is cooked through.
- Dip into your favorite ketchup, mustard, and/or aioli.
- Enjoy!
